The microwave vacuum technology for dehydration of raw materials is the most promising way of processing fresh agricultural products into environmentally friendly products of new quality: ones having a long shelf life; quickly restoring the natural properties of the product (shape, consistency, color, taste, aroma) upon contact with water; almost completely preserving vitamins, biologically active substances, essential oils.

The main difference between microwave dehydration and traditional drying methods consists in volumetric heating. Heat does not penetrate into the product from the surface, but is formed immediately in the entire volume, which makes it possible to dry, for example, onion bulbs or at the same time roots, stems, leaves and flowers of plants.

There is an even distribution of moisture in the dried product. The microwave drying has the advantage of not transferring heat from the heater. When using other drying methods, you first need to heat the air with a heater, then to transfer the heat from the heated air to the product. In this case, inevitable heat losses occur at each stage: heating air, transporting it, transferring heat to the product. In case of microwave drying, the heat source is the product itself, so there are no losses mentioned above. The microwave rays have a sterilizing effect against staphylococci, Escherichia coli and other microorganisms. In some cases, it is possible, with the help of microwaves, to return products that begin to deteriorate to a normal condition. There is evidence of increase in germination and germination rate of seeds after their microwave treatment.
